1. 1/2 cup (113 grams) unsalted butter
  2. 1 cup (205 grams) light brown sugar
  3. 1/3 cup (80 ml) of water for boiling
  4. 2 large eggs
  5. 2 tablespoons honey
  6. 1 teaspoon pure vanilla extract
  7. 1 cup (130 grams) all-purpose flour
  8. 1 cup (130 grams) whole wheat pastry flour
  9. 2/3 cup (70 grams) old-fashioned rolled oats
  10. 1 teaspoon ground cinnamon
  11. 1 tablespoon freshly grated orange zest
  12. 1/4 teaspoon salt
  13. 2 teaspoons baking soda
  14. 1 teaspoon baking powder
  15. 3/4 cup (180 ml) milk
  16. 3/4 cup (180 ml) buttermilk



  1. Put the wheat bran in a bowl and add boiling water & stir. Set aside.oat muffin
  2. In a separate large bowl mix and beat butter and brown sugar using a mixer (hand mixer or an electric mixer) till it is light and fluffy. Add eggs, one at a time, beating well after each addition. Add the vanilla extract and honey beat again until it’s well mixed. Add the wheat bran and beat until combined.
  3. In a large bowl, whisk together the flours, oats, cinnamon, orange zest, salt, baking soda and baking powder.
  4. In a small bowl combine the milk and buttermilk.
  5. Add the flour mixture in three additions, alternately with the wet ingredients, in two additions, to the bran mixture, beginning and ending with the flour mixture.
  6. Cover and place the batter in the refrigerator for chilling (several hours or is possible for a day or two).
  7. Preheat oven to 375 degrees F (190 degrees C) and place the rack in the center of the oven.
  8. Line a 12 cup muffin pan with paper liners or else spray with a nonstick vegetable oil spray.
  9. Fill the muffin cups, using two spoons or an ice cream scoop, about 3/4 full.
  10. Bake them for about  20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  11. Remove from oven and place on a wire rack to cool slightly before serving.
